This calculator works on an open database system. The food-profiles of this database are under steady construction and they are in some cases not completed yet (data sets of the proximates and following minerals and vitamins are nearly completed: sodium, potassium, calcium, iron, phosphorus, vitamin B1, vitamin B2, nicotinamide and vitamin C). Therefore some values have to be regarded as minimum values. Furthermore the accuracy of the data obtained by the calculation procedure is limited by the fact, that all foods exhibit natural variations in their composition. This is considered in the specific data tables for the single food items (cf. 2.2 Introduction) by giving the average values and their variations, respectively, but is not implemented in the calculation tool. Attention should be paid to these coherences using the calculated data for scientific purposes.
Detailed information on the structure of the tables, specific food constituents, modes of expression of data and the integrated food items are given in our Introduction to the tables.
